9" square cake with a 7" round cake on top. Make turrets out of cardboard tubes covered in fondant, top them with either sugarcones or cardboard tops covered in fondant.
VERY easy

another variation...make towers out of rice krispy treats and cover with fondant or bc, then make turrets out of sugar cones dipped in tinted candy melts and sprinkled with colored sugar. Mine was 8" and 6" rounds.

I made my towers out of butter cookies. They have a hole in the middle of them and just RI them together and covered with BC and topped with sugar cones with fondant. The cookies gave it a more of a stone look which is what I was going for

I have a really easy castle cake in my photos. I used ice cream cones with sugar cones on top for the towers. Next time I would just use cupcakes with sugar cones as the empty cones were very wobbly once covered in icing. I would also use cut straws as dowels under each cupcake so that the corners don't get weighed down. HTH! Good luck!

I have a castle cake too. I'm willing to share the directions if you are interested. Mine will take a bit longer to put the walls and turrets together, but its fun.

Good luck with whatever you decide. I am sure your niece will love anything you do!
