I need a good recipe for Cream cheese icing. I have a wedding cake in October that the bride wants cream cheese icing on spice cake. Does anyone have a wonderful recipe that they use and love? You can e-mail me directly, if you would like. Please put in the subject line cream cheese icing recipe.

I have used the one on this site, it is Crusting cream cheese icing.

I thought it work great, and tasted awesome.

Does it need to crust ? I have a great one, but it doesn't crust.

I always use this one. It's great because it's not too sweet. It's also fab with some almond extrat added. I always double the recipe when I make it . I think it whips up better in the KA that way.

Cream Cheese Frosting
Ingredients:
10 oz cream cheese, at room temp
.75 c confectioner's sugar (icing sugar)
2 Tbsp unsalted butter, at room temp
.25 c + 1 Tbsp heavy (whipping) cream, at room temp

1. Cream the cream cheese, sugar and butter in a medium-sized bowl with an electric mixer on medium speed for 3-4 minutes, until light and fluffy. Scrape bottom and sides of bowl.
2. With mixer on low speed, add cream in a stream and mix until incorporated. Scrape bowl.
3. Increase speed to medium-high and beat until light and fluffy, 5-10 minutes. Keep at room temp utnil ready to frost the cake, max 1 hour.
