so a friend of mine wants a square 3 tier wedding cake. covered in ganache.

any tips would be fabulous!

like do you guys usually put the cake in the freezer before covering? the cake will be iced in whipped cream so it will be soft....

what about stacking, any tips?

Generally, ganache isn't used over whipped icings. You might want to do a test run on a small cake to see how it works for you. icon_smile.gif

I've never did ganache over whip cream, do you think that will hold up? I make a smore's cake and spread ganache over marshmellow and as soon as it hits the marshmellow, the marshmellow starts to melt. Not sure what whip cream would do.

I'm sort of thinking the whipped cream will melt because you pour the ganache on while it's still quite warm. Also, if you are in a location where it is at all hot, both your whipped cream and your ganache will likely melt right off the cake. Personally, I don't ever use whipped cream for weddings this time of year, and I only use ganache as a filling or when it's just drizzled on the top of the cake (course I live in Texas and it's stinking hot here)!!

If you're going to do it, I would maybe try it on a practice cake before the wedding in case there are any problems. let us know if it works ok!

well ive done ganache over whipped cream before, i just put the cake in the freezer before pouring the ganache over
