Is this what you are looking for?

Lunchroom Butter Cookies

2 sticks butter (not margarine)
1 cup sugar
2 tsp. vanilla
3 cups flour

Preheat oven to 325 degrees.
Bring butter to room temperature. Mix butter and sugar together.
Add vanilla. Add flour a cup at a time, mixing well after each
addition. Measure a spoonful of dough and roll into balls and
place on cookie sheet. Flatten cookies with a fork dipped in
flour. Bake for 10-15 minutes or just til golden brown.

Thanks Cupcake, I think thats the one. It's kind of a crunchy cookie but not too crunchy. I just remember it being a real buttery cookie.

Hi girls, just want to let you know that I just pulled my first batch out of the oven and I have to say I'm a little disappointed. The dough was very dry (followed the directions to a T) so I added a little more butter to get it to stick together better. I used a french vanilla for flavoring and it was good but I would say for the overall flavor all I tasted was flour. Now my dh (who is no conissuer and will put ANYTHNING in his mouth) loved them and said, "they melt in your mouth". Go figure! Anyway I would like to try the recipe again but maybe only two cups of flour not three and I may split the recipe and try one half with a lemon extract and the other with orange just to see what it taste like.

Just wanted to let you girls know that I did try the recipe and how it worked out for me. Thanks, let me know your take when you try it.

Hey Samsgranny, I tried the cookies but I put in a egg yolk, Probably could have used the whole egg, But anyway, they didn't taste bad. I even Iced some of them. I eased up on the flour too.

Steplite, interesting that you bring up the suggestion of the egg as I thought it was curious that there wasn't an egg in the recipe. I've never made a cookie without one and wasn't sure what the difference would make. Is it more cake like with the egg?

Yes Samsgranny, They did taste more cake like. It's really something that doesn't take a long time to make when you just want something sweet. I think I'll just put the whole egg in next time. I'm always game for trying something new anyway.
