Now I also know, all this may come back to bite me in the a** and I might get fined for not being "legal"( i am actually expecting it after the live competition I am doing at the fair on the 9th).... but I have all my sinks, my oven is to codes, as are my floors, walls, doors, etc (the only thing i lack it cool commercial fridgeand freezer... but the scratch and dent kenmore will work for now). there are dozens of "illegal" home bakeries in middle TN that have been operating for years with out fault ( the only truly legal one I know of is Sweetest Day), so I am willing to run the risk until i get all my s*** together.... come what may....
We should all totally get together for lunch sometime! I would love to meet some fellow CCers and talk shop! Tell me when and where and I will be there (unless I have cake and or wedding disaster... I can't wait until my own wedding is over!) If anyone has any questions or has other info that i don't post it.... cause god knows you never stop learning!

I'm a newbie in this cake decorating world, but I really want to make this a full time gig!! I've already taken the "Food Handling" class and I do plan on becoming legal, it's just going to take a few months to get my basement together; because of this, I've been scared to advertise, so I've been doing my cakes by word of mouth!! Thanks for this post, it is very encouraging.

Hi Kaysie-I haven't met you, but will give you a virtual hug beforehand. I heard you are competing with Jay and Jo though and I absolutely ADORE Jay Qualls-it will be a very good and fun competition for sure!! Your work is flawless. The time thing would really be the hardest for me!!

Your cake was incredible, and I hope someone can post a picture here for all to see. You did an awesome job and the eagle just stole the show! I really enjoyed watching you work, and can't wait to take a class from you.
Kaysie-I second the congratulations. I'm not awestruck very often but you did it. The cake was absolutely incredible. I have pictures to share, but I'm sure you got a great one of your own. Please post ASAP because members will be completely blown away by your talent. I can't imagine pulling off what you did in three hours. Every little feather on the wings painstakingly made in modeling chocolate just made me shake my head in wonder. The granite looked so real, it was phenomenal.
The other cakes all had great attributes, and certain things I liked, but yours was simple awe-inspiring. I can't wait to see you on TV. I have no doubt you'll be there soon with your talent. I swear I'm not a butt kisser, I'm just amazed with what you were able to do.

Do y'all know if anyone sells Satin Ice fondant in Nashville or Murfreesboro? I need to make a baby shower cake for a friend this weekend and she asked for fondant. I'm feeling too lazy to make my own but it's too late to order online.

I am a member of ICES for about a year and I have take some classes with them last fall and spring that is woth it... Day of sharing are very fun.. I will be there this fall Keith and Laurel are owsome teacher... I can wait..

Kitchen Facilities" here's the man--

called our local health dept in Crossville to see who could
give me the rules for baking cakes out of my home kitchen
like so many, many others in town do. The man said, "If
you advertise, we will shut you down!!. A family friend did
cakes until she had business cards printed, and I shut her
down!" I asked (very cautiously) " if I don't advertise in any
way but word of mouth, it is ok to bake cakes for wedding,
birthdays, etc?" He answered, "It's ok." Then he gave
me Mr. Murphy's phone number to get the info on commericial
kitchens. I think everyone should email, phone, etc their state
representative and senators with detailed statements about
our misgivings of these rules. Hope all this helps.
The problem with that is it's different in every county....sometimes even city. You may be in compliance with the state, but not with your city or county for one thing or another. They have absolutely NO idea what to do with us because they had no idea what size of "business" we could potentially have. They have always operated under the don't ask, don't tell policy. They are having a hard time getting everyone in the state to do things the right way.
Getting the rules for Domestic Kitchen took forever and passed...THEN they introduced the House Bill 1048 and basically negated half of what they passed. There are ways around everything. I've given up on the state (yes, I realize that's probably what they wanted us to do!!) and bake in a licensed catering facility. That is my "out" until they stop talking in circles.
I am very familiar with Mr. Murphy and Mr. Sanford. They are extremely nice gentlemen that seem to want to help us...they just haven't figured out quite how to fix it for now.
