How do you attach your sticks? I made some tonight and some I was able to get the stick under hte chilled cookie pretty easily, but then when baked, it's not a smooth surface to decorate. Then on some, I layed the stick on top, but then it didn't seem all that secure. I used some bamboo skewers and some lollipop sticks. The lollipop sticks worked the best, but like the length of hte skewers. What do you do?

I use the wilton cookie sticks and put them in the cookie as soon as they come out of the oven. They seem to be pretty secure.

Under the cookie? Are your cookies thick enough that it's actually inside the cookie or just under?

do you put the stickes on while they are still in the pan? I usually put mine in before, but it limits how many you can bake at at time.

My cookies are a little more than 1/4 inch thick. I put the stick inside the cookie from the bottom. For example, I made pumpkins, put them on the cookie sheet (bottoms facing out) when I took them out of the oven, I inserted the sticks. Hope this helps.

I use the Wilton sticks also. I put them in before I bake them. I roll the dough pretty thick so that the stick is completely inside the cookie and you can't see any indentions from it. To make it more secure, make sure you twist the stick into the cookie rather than just stick it in.

I ue the bamboo skewers and have had great success with them. I roll the dough a little thicker and insert before baking. Best of luck to you!

I have inserted the stick into the dough before baking also. It works well if you cough is thick enough.

I also have used royal icing to attach the stick to the back of the cookie. It worked great. I think you can also use candy melts.

I have trouble baking the sticks in the cookies so I use candy melts or royal icing to hold them on.

I thought you were supposed to put the sticks in and smooth the surface, if needed, before you put the cookies in the oven(?).

Don't you risk cracking the cookie if you put them in after they're baked?

Theresa,

As long as you insert your sticks immediately after pulling the cookies out of the oven, they will not crack. I use this method only. I use the flat wooden coffee stirrers and popsicle sticks. They are thin enough that they don't damage the appearance of my cookies. I roll 1/4" thick. If you wait too long to insert, you cannot get the sticks into the sides of the cookies, and they will break. Too long can be pretty quick - like a minute.

This probably sounds real silly but it works for me. I usually make "thick" cutout sugar cookies so when I plan on making cookies on sticks I cut the thickness of my dough in half. I then take one thinner cookie for the bottom, lay the stick on top, and then another cutout on top, so the stick is sandwiched in the middle. By the time it is baked everything sticks together and the back looks just as nice as the front. Occasionally a stick will not be tight so after the cookie has cooled I just dip it into some frosting and then stick it back in the cookie....it will stay then.

I have a batch of winnie the pooh in the freezer waiting for me right now. I am planning on putting them on sticks, but if I change my mind and want a regular cookie I will just stack them together and make a normal thickess one.

Hope I didn't confuse you too much but this always works for me. Granted it took a while to get it down.

I also insert the cookie sticks (dowels or coffee stirrers) immediately after I remove them from the oven. As the cookies cool, they adhere wonderfully and are very solid!
