I am making 2-12x18 cakes this weekend for family reunion. They will be put side by side to make full sheet. I want to make 2 different kinds, I also want to do something other than just chocolate and yellow cakes. Since I am travelling close to 2 hours to get there I am just going to have to stick with with mostly shortening buttercream, but was wondering if you all have any ideas about what I can fill with as well. I am just so overwhelmed by the decorations that I already started working on (a family tree with each leave with a persons name, 107 names!!!) I am praying I can get it all done. Thanks in advance for your help

This site has a great scratch strawberry recipe and I like the white almond sour cream cake. Those are both great!! Ummm...not sure about fillings, though.

Also, I have used liquid coffee flavors (Divinci, Torani) to give flavor to white and/or yellow cakes. I used french vanilla with a white cake, black cherry, toasted marshmallow, butterscotch...they have all turned out really yummy tasting!!!

[size=18]Strawberry or Raspberry Preserves mixed with a packet of unsweetened Kool-Aid is a tasty filling. Believe it or not - the quickest and eaisest filling ever. Sometimes I melt marizpan and fold it into the jam mixture. Happy Baking! icon_biggrin.gif
