hi, i don't know if there is already a poll for this but i was wondering what you prefer to use when making roses, buttercream, fondant, MMF or gumpaste, i have a cake to do and i want to make roses but idon't want to use just regular buttercream so i am using this poll to see what the most popular medium is, and i was leaning towadrs MMF but does it hold up or is gumpaste better.

I like buttercream simply for the fact that I like to be able to eat everything on the cake.

I actually like making starburst roses the best.

I use roses so seldom buttercream is the quickest and easiest for me. I am terrible at fondant and gumpaste roses so that may be why.

Ah! You forgot marzipan, this is what I like to make roses from, it's easyish to work with and they taste yummy.

I don't have a favorite medium. This is simply because I can't make roses. I hold my head down in shame. icon_redface.gif I had trouble in class, so I gave up. Haven't tried to make them since.

Hmmm...I guess it is up to you! If you want the cake to be 100% edible, use buttercream or royal icing roses. If you want them to look realistic, use gumpaste. If you want them somewhere in between edible and realistic, use fondant!

I like buttercream b/c they are the quickest for me to do. The cake in my photos that is 3 layers of cake with roses cascading down it took me about 5-10mins to make and place all of the roses.

Others are talking about fondant/gumpaste not being edible? They are all edible, it is just weather or not you like the taste. I havesome people that like the gumpaste and others (me included) that can't stand the taste.

I voted for gumpaste as they are the prettiest to me but I am currently doing cupcakes with BC roses on them..and it is more casual..

I think it really depends on the "look" you are going for!!

I don't make roses very often, buttercream are quick and easy, but for look (which I take into consideration first), I always go with fondant/gumpaste mixed together.

lol i'm terrible at frosting flowers in any edible medium so i opt for silk or real icon_smile.gif

i like doing bc roses but i have my own way of doing them because i cant do them the normal way...i pipe the cone middle and freeze in the freezer before adding petals. I've only tried gumpaste once but had problems with it because I'll think its dry and then as soon as it sees any heat or humidity it resoftens. perhaps I'll pick it up again come cooler climate

I cannot make a buttercream or royal icing rose to save my life. I had tried and tried, taken lessons and everything. Last year I made a beautiful cake for my boss with roses all on the top (look in my pics) it came out beautiful but then something happened. I can't make them anymore. Yes, I feel stupid. It's like, what happened? I have no idea.

Pulled sugar is hard candy which is warmed most often under a heat lamp until it is pliable. In the case of roses, I pull the sugar thin and into the shape of petals then use a flame to melt the bottom of the petals together to make the flower. The flowers are quick and ready to use as soon as the sugar cools enough to maintain shape.

There are different recipes to make the sugar they either isomalt or sugar, glucose and some form of acid.

In a pinch I have used jolly ranchers to make flowers. Though I prefer to use isomalt, which is an artificial sugar substitute which can handle humidity better.

I can't make very good buttercream roses. Fondant is much easier for me.

I make all my flowers, roses included with gumpaste - I've never tried making them with buttercream or RI ( that looks hard !!! ) icon_biggrin.gif

I prefer royal icing. Out of the list, though, I prefer buttercream.

I prefer buttercream because they taste good, but I like fondant cause I can make them in my spare time, store and just pull them out when I need them.

I prefer buttercream if its not too soft...(depending on humidity here, that is), but my ALL time favorite is the Rich's Bettercream that we use at the bakery I work at...I may not like the taste...but they make BIG beautiful roses...icon_smile.gif and sometimes the outside of the petals crack just a teeny tiny bit to make them look realistic icon_smile.gif

For me it really depends on the cake -

for kids cakes I like buttercream because some kid always likes to eat the rose

for weddings - gumpaste - I think you can really make them look real!

Hi sunflowerfreak -

Yup, I know what you mean. I used to make nice roses, then all of a sudden today I can't make one to save my life. My delicious buttercream was grainy and that normally is great and not only the edges of my roses were ragged, but I couldn't get the petals right.

This is for an uncle's 90th birthday and it looks pathetic. How can I all of a suddent forget how to do it? icon_cry.gif
