I have to attend a wedding three hours away and I need to make the following things Friday night for a Sunday night wedding....Will they be okay??? I do not want to serve rancid baked goods! These will all be @ room temp., I have no other option.

mini pecan tarts
chocolate chip cookies
mini cheesecakes (can these last @ room temp for two days?)
lemon squares
marbled brownies (contains cream cheese)

i think everything sounds fine to me except maybe cheese cakes???

This is just my opinion, but I would find a way to refrigerate the tarts and the mini cheesecakes. Maybe you could borrow refrigerator space from a friend? And, I would keep the others in airtight container. I hope this helps!

Hi there! I can see your dilema... I would say that the chocolate chip cookies, as well as the pecan tarts (i'm assuming they are like mini pecan pies?) would be ok at room temp. I'm not too sure about the lemon squares. The brownies with cream cheese, as well as the cheesecakes should be refridgerated. Is there any way to take them in a cooler with a couple of gallon containers of water, previously frozen, so you have an ice source to keep them chilled? Also, you could purchase "sheets" of mini ice packs. They are 1'x6", and contain 12 seperate ice gel pacs. good for storing stacked items... Just a thought. Good luck!

ok the choc chip cookies should be ok, as well as the brownies. Keep in mind that the brownes may get a little hard, but a quick pop in the microwave will soften them up just fine. I honestly wouldn't do the mini cheesecakes if yo can't keep them refrigerated. It's just too risky. As far as the pecan tarts and lemon squares...I would say that it realy depends on the recipe.

i agree about the cheesecakes & my mom always puts her pecan pies in the fridge, so i'm not sure what to say about these..

do you have a cooler (ice chest) that you could keep these ideas cool in--could you borrow one?
