Keep Getting Dusty Mmf And It Don't Look Good On My Cake

OK, so maybe I am just slow but here is my problem.

I use MMF, but to get it so it won't stick to my table when I roll it out I have to cover the table with a dusting of corn starck of powdered sugar.

This is fine if it is white MMF because I can brush off most the powder and it looks ok, HOWEVER, when I use colored MMF, I get this nasty white dusty look and I can never get it all off, and it looks bad.

Any suggestions? If I use shortening to get the powder off the cake looks glossy.

I use a plastic mat to roll the MMF out on. As I am rolling, I will lift it off and turn it several times to keep it from sticking to the mat. When you have it to the size that you need, you can try any of these: 1. lift off and cover cake (for small cake), 2. roll up on rolling pin and unroll onto cake, 3. if it has some sticking, lift the rolling mat and turn it onto to the cake and peal away the plastic mat. Smooth out any imperfections. Trim off the extra with a pizza wheel. No corn starch or powdered sugar needed.

I only use shortening to roll my mmf. No sticking, no dust, no discoloration.

It works great!

How about dusting the cake with a paintbrush dampened with a little vodka or everclear, the way you do when you paint a cake, to dissolve the cornstarch without making the fondant soggy?

I've seen Duff lightly airbrush a cake with vodka to accomplish the same thing. If you don't have an airbrush, maybe a Preval sprayer?

I had this same problem. I don't like using Crisco to roll out my fondant, so I didn't want to quit using the PS.

After I saw the Ace of Cakes episode mentioned above, I started using Everclear. I just brush it on with a paintbrush. It evaporates off really fast, so you never know it was there!

Awsome. I would have NEVER thought of some of those ideas. I don't drink alcohol so I would have never even thought to use that... so Everclear? Exactly what is that?

Everclear is 100% grain alcohol. You can also use an extract with a high % of alcohol, if you have that on hand.

thanks everyone - I used just a smidge of crisco and turned the MMF or flipped it over after every couple of rolls w/my rolling pin and it worked well w/ only a little shine
