I roll them at least 1/4 inch thick. There are some treat sticks I have used that are a bit thicker than others. I just make sure the cookies is a little thicker than the sticks, so they stay in the cookie.

A normally crunchy cookies will draw some moisture from the icing, so they will be firm enough to hold, but not so hard it isn't good to eat.

Same here, I go with 1/4 inch. I use those wilton lollipop sticks and the cookies are thick enough to accomodate them. You could also try skewers, heard those work great; I haven't gotten around to trying them just yet...

I did a cookie bouquet last week and I used wooden stir stix for coffee but the long ones for the large cups I rolled my dough 1/4 " and it went perfect.

My cookies are just slightly thicker than the cookie pop sticks I use. I find any more than that is overkill and they are way too heavy.
