I want soft chewy cookies -- I hate hard cookies.

But I want to use cookie cutters too.

have you tried the no-fail cookie recipe? it is for cut-out cookies and it doesn't come out too hard.

i find that if you take the cookies out before they tan too much they stay softer longer

take the cookies out right when you start to see the tinyest bit of brownign on the edges, they continue to cook awhile after you take them out of the oven , so it will be just right. thats what i do and they are nice and soft. But not break apart in your hand kinda soft.

it's funny...in my baking classes, the chef's want you to cook it to a deep tan. i've found that most people prefer it when they are just barely a touch of tan.....much softer cookies.
