Sorry, I don't know the answer to your 1st question, but I can answer the 2nd. My Wilton instructor told us to add meringue powder to a boxed cake mix to stabilize it and help it rise better. Hope this helps a little bit.

I believe it is 1 tablespoon, but I am at work right now. I will be off in 30 minutes and I will check when I get home and post again for you.

Just another perspective icon_smile.gif I've done cakes with and without adding merigue powder to the batter and I haven't really noticed a huge difference, especially for the added cost. It certainly doesn't hurt, but I don't think it helps all that much either.

To me the meringue powder makes the cake too dense-I use sour cream instead.
What you do may be a "little thing" but "little things" add to alot!

I use a good sized "dollop"-I use a kitchen cereal spoon-I've never really measured it----

Sounds like that is all you add to it, haven't tried it out so who knows how it turns out. Recipes are a matter of taste even on this site, some will like the results, others won't.
Regarding the adding meringue powder, personally I think it is an awfully expensive thing to add to a cake mix. The purpose is to add extra leavening and there are cheaper ways to do this. In a white cake, use all egg whites instead of whole eggs.

Check the forum-Cali4Dawn does them alot-even has a tutorial on them! Really fun to do! I do them alot now for kids parties or a gettogether at work where it's easier than having to cut a piece of cake with knife!
