Freezing Baked Cookies

OK, I am making favors for a baby shower on Sat. I just baked the cookies today. Should I freeze them until I decorate them? Or will they last without it? I am assumning they will be a lot more fresh if I freeze them, but I have actually never frozen baked goods before. Someone please set me straight.

Most cookies freeze perfectly. If you have decorations, separate the layers with parchment or waxed paper.

If you are decorating them won't they need a few days to dry?

Are you making a lot of them? If you are, then I think you might need to start them soon especially if they are for this Saturday.

If I needed cookies done for this Saturday, they would be getting decorated tonight and tomorrow and drying for a good whole day or two and then bagged the next. I wouldn't want to risk them not being dry when I am packaging them and therefore smooshing the icing.

I keep my house pretty cool(68/69)degrees when I am decorating and they taste just fine(or so I have been always told).

This is what I would do, you have to do what you are comfortable with. I am not very fast with a pastry bag!

I was wondering the same thing. You can freeze a sugar cookie frosted with royal icing and the dried royal icing doesn't become discolored or smeared? I just tried one to see.

What is best, wax paper between them, or plastic, or parchment?

So if I don't freeze them at all they would be OK? That eould wprk better for me actually. I wasn't sure how fresh they would be if I didn't. I am making about 100 cookies (smaller ones). TIA

My "test" frozen/frosted cookie came out great. I've frozen lots of other baked goods from cakes to breads and most come out fine. But if you just made the mix and baked them on Tuesday, they will be fine for this Saturday if you keep them in an airtight container.

My royal icing took about 18 hours to dry completely and you can't cover them while they are drying. That was the challenge for me...finding a place to sit them where they wouldn't get touched by a kid or be in the way while we ate dinner. My kitchen/dining area is way too small.
