but I didn't know until tonight that you can not substitute coconut cream for the milk in your favorite white cake recipe!

Super "Ed" here, was thinking..."ooooooooooh, I want a coconut cake that tastes like coconut all by itself. Hmmmmmm, I'll just put the same amount of coconut cream for the milk!"

Well, what I got was a very incredible cake taste-wise. The texture came out more like a pineapple upside down cake. It didn't rise nice and high like my normal recipe does. But, it is delicious.


Does anyone have a coconut cake recipe that they would be willing to share that doesn't have to have a coconut filling? I would really like the cake to taste like coconut all by itself.
Or maybe someone can tell me of a good flavoring to use....the McCormick imitation coconut flavoring ruined a pound cake I had made quite some time ago so, I don't want to use that one again.

Anyone?

Why not buy the coconut cake mix by Duncan hines--That is if you want mix!

DH makes a great coconut cake mix. I know you can add coconut pudding to it to make it double delicious. You can find it in Walmart Im not sure where else carries it I had a hard time finding it. Hope this helps.

I haven't tried using it in a cake so I don't know if it would work or not, but Coffeemate has a new Coconut Creme liquid creamer that is really delicious. Maybe if you substituted that or maybe half milk and half creamer. It might be worth a try at least. It sure is delicious in my coffee!

I'll try the creamer suggestion...hmmm...maybe after payday.

The cake I made today is delicious, it just didn't have the height I wanted. It's more a wet-type dessert cake...not wet like gooey but really moist and dense. After reading coco lopez recipe, I think it would give me the same result I got today but with nuts and coconut in it. BTW, it was coco lopez coconut cream I used.

My DH will love the "mess ups". I just wanted to make a tiered cake with three different flavors.

Instead of using coconut cream, you should try using coconut milk. You can find that in the ethnic food section of most grocery stores. Caution - it will likely have separated in the can. Just scrape it all out and send it for a quick spin in the blender or food processor. Sub about 1/3 of the quantity of milk in your recipe with coconut milk and I think you'll find the flavor is very good without being "fakey".

Not to toot my horn, but my coconut cake won grand champion at our county fair this summer. Coconut milk was one of my key ingredients.

Try it and see how you like it!

Baking911.com has a butter cake with a coconut variation. It uses finely chopped coconut cooked with regular milk.

-the coconut milk is a fab. substitution--although a little expensive...the coffemate or international creamers are just as good without the added expense.
- add some chopped up cocnut to the coconut supreme cake mix, I won a cake contest a few years back (and thats before I even did decorating!!)

The "Coconut Layer Cake" at Epicurious.com is wonderful!!! It also uses Coco Lopez. Mmmm...making me hungry!

hi,.... i just substitute the milk in my yellow cake recipe for the coconut milk. you can gt it in a can or powder. (in jamaica) i am not sure how easily you can get the coconut milk in the can or powder. i use the canned coconut milk. the same amount that the cake calls for. it will make your cake just a tad bit heavier than the regular milk/water. try that out. you will get good reviews. i got good reviews with mine. ho[e this helps.

I also posted a coconut cake recipe I found somewhere that sounded just divine. I never tried it, though.

You can do a search for "coconut" with me as author and it should come up. I believe there was coconut filling as well, but I doubt it's necessary.

well, I tried it using the coffeemate coconut creamer instead of milk. It still didn't have the height on it but at least this one didn't sink in the middle! oof!

next payday, I'll try another. hmmmm
