Moss?

Hmmm..how would you make moss for a cake? Anyone ever do this? No luck in a search here.... icon_confused.gif

what kind of moss, like the green kind of moss or peat moss?

Why not use spun sugar, only draw back is the icing on your cake would melt it.

You can use rice pasta that is available in the Asian food section of the grocery store. It's very thin and white. Tint the water in a saucepan whatever color you'd like the moss to be, keeping in mind that the white pasta will make a lighter color than the water is. Boil the water and put the rice pasta in for just long enough to get the pasta pliant. Take it out and shape it as you like and leave it to dry on paper towels. I've done it a few times and it works great. Here's an example of it used as a bird's nest instead of moss, but I also use it as filler underneath gumpaste flower arrangements on wedding cake.

You might try texturing fondant with a mushroom scrubber brush (it looks like a mini plastic bush with nylon bristles).

Use the grass/ hair tip I can't remember the number off of the top of my head. Use moss green frosting obviously and pipe grass down. use a fingertip dipped in cornstarch and gently press the icing down to get rid of the long strands of frosting. The I suppose you could use green dusting powder of fine dusting sugar and a darker color to give it a real look. This is only a thought I have not tried it. What does anyone else think?
