Just completed the Wiltons courses and starting out as an instructor and interested to know if someone can advise me on what the California gidelines are for selling cakes to others????

I know you can't have a baking business out of your home here. It's unfortunate. We should all band together and work on this.

I agree.
Seems like there should be a basic requirement for hygiene certification and kitchen compliance with standards that make sense with the restaurant compliance...

Hope to hear how others are dealing with this also...
Can you use a church kitchen?? Bake at a restaurant for a fee after hours? Lease time from a caterers commercial kitchen?
Have clients sign a waiver?

I too live in California and am working on trying to find my own commercial kitchen. For the past year, I rent a licensed kitchen from a caterer I know by the hour, it works out ok but I want my own place.

The law in California states that no food products can be made and sold from an unlicensed commercial kitchen. And under no circumstances can food products be produced in a residential kitchen.

Any commercial kitchen that has a current license from the health department can be used, which can include; church, school, restaurant kitchens etc... But the key is Current License from the Health Department. The licenses must be hung up in the facility.
