Hi All,
All of us are rushed during the time leading up to Christmas, so when mixing my cookies, I double the recipe in my Kitchen Aid mixer. Does anyone else double recipes or do you just make one batch at a time? Any hints to getting a large supply of cookies to have on hand? I've raised four sons and when they come home they really want their cookies to eat here and take home!

I just got a 6qt KA and it'll make triple batches without even sighing. Love that thing. I am the Christmas cookie queen in my family. Lots of cookies for everyone we know, even a few we don't (lol) and lots of variety. My big secret, before the KA... start baking early and freeze them. I even freeze the one's decorated in BC (freeze until hard then package). We eat cookies well into February that were made in late October. My DH can't even tell the fresh from the frozen and he is PICKY about that kind of thing. Also just read on this site about freezing your dough so that is also something to consider

i too have a 6qt kitchenaid and i double, triple and quadruple me cookies all the time! for the cut out sugar cookies i double the no-fail recipe but for a normal batch of ch. chip i can triple or quadruple it.
i also freeze baked cookies. i let them cool then put them in zip lock freezer bags and freeze until needed. sometimes they are in there for months and come out tasting perfect.
i have also frozen dough and that works like a charms as well!

I make double batches of royal icing. I have a 4 1/2 qt. KA. I only make 1 batch of cookie dough because the KA is not big enough. I'm not complaining. I'm just happy I have the darn thing!

I notice several people referring to the 'nofail cookie recipe'.. I am new to this and REALLY need that recipe!
Also, a BIG favor. I need and want to nake sugar cookies for a dear friend. However, she is diabetic. Does anyonr have a recipe for a curt out sugar cookie that has no sugar??!!

Can your friend tolerate maltitol? It subs for sugar flawlessly, both in sweetness AND in texture (splenda only provides sweetness). Unfortunately, for some people it can be laxating and for others it can cause a blood sugar spikes.
If she tolerates it well, it's ideal because you don't need a special recipe, you just swap it one for one with your favorite sugar cookie recipe.
And, diabetic can translate into a lot of different things these days. Some diabetics still follow the outdated, sugar-free philospophy, some watch all their carbs, some eat normally and medicate and some eat whatever they want and take their chances. If your friend watches her carbs, you might not be able to use white flour. In that instance, almond flour might work.
