Does anyone have a raw egg free recipe? I need to fill a cake for a baby shower tomorrow! Thanks!

I have made this before, but haven't used it as a cake filling. I've used it served in pastry puff. It is the recipe found inside the box for Baker's brand Premium White Chocolate baking squares. It's pretty easy.

1 pkg (6 squares) Baker's Premium White Baking Chocolate
1 1/2 cups whipping cream, divided

MICROWAVE chocolate and 1/4 cup of the cream in large microwavable bowl on HIGH 2 minutes or until chocolate is almost melted, stirring after 1 minute. Stir until chocolate is completely melted. Cool 20 minutes or to room temperature, stirring occasionally.

BEAT remaining 1 1/4 cups cream in chilled medium bowl with electric mixer on medium speed until soft peaks form. DO NOT OVERBEAT. Add 1/2 of the whipped cream to chocolate mixture; stir gently with wire whisk until well blended. Add remaining whipped cream; stir just until blended.

REFIGERATE 2 hours or until ready to serve.

Makes 6 servings.

Just thought of another option. I regularly use whipping cream mixed with a box of instante pudding to make fillings. Jello brand makes a white chocolate instant pudding mix. Whip this with 2 cups of whipping/heavy cream and you will get a nice filling. Very quick and extremely easy. thumbs_up.gif I've used this recipe with several flavors.

Unfortunately, both recipes I came up with will need refrigerating. icon_sad.gif

If you go to Kraftfoods.com there is a good one without eggs and it's really easy to do also. It tastes really good too, would be great in a cake
