How do I know if the recipe I found for chocolate buttercream will crust? Also, will it be milk chocolate color or darker? I need it to be darker. I have looked for Dark Cocoa but I can't find any!!!

I haven't tried it, but Wilton has a recipe for crusting chocolate buttercream. If it's too light, you could always add some coloring.

Hello

I believe that the recipe from the Hershey site also crusts, and it is very easy to make;
In order to ensure a dark color for your chocolate icing, use at least 1/2 cup of cocoa (hershey's is great; & Fry's is also very good). If you need to add more for a richer color, then you might have to adjust the milk too.

Hershey's One Bowl Chocolate Buttercream Frosting
Directions

6 tablespoons butter, softened
2 2/3 cups powdered sugar, sifted if necessarry
1/2 cup Hershey's cocoa
1/3 cup milk
1 teaspoon vanilla extract

In small mixer bowl, beat butter. Add powdered sugar and cocoa alternately with milk; beat to spreading ocnsistency (additional drops of milk may be needed). Blend in vanilla.

About 2 cups of frosting

For other great chocolate recipes (including glazes, frostings, etc) go to

www.hersheyskitchens.com or http://www.hersheys.com/home.asp

hope this helps

Ciao
