Hello, Does anyone have a recipe for strawberries and pastry cream filling? And how long can a cake like this stay out?

Are you asking for strawberry pastry cream filling, or do you want to add strawberries to your pastry cream?

go to www.frenchpastrychef.com and look up the recipe for strawberry mousse cake. there is a recipe for strawberry pastry cream there.

If you want to add whole or cut strawberries to your pastry cream, the answer is Don't. When the strawberries mascerate from the sugar in the pastry cream, they will water down the pastry cream, leak through, and make a mushy mess.

But how come I have tasted wedding cakes before with pastry cream and strawberries, how do they do it? :/ humm... I am actually attempting a sculpted cake with this filling. I guess not. If anyone else has a suggestion, please?
