I usually use the no fail suger cookies recipe for my cookies, and let them cool of for like an hour or so before icing them. But for some reason they always go soft and chewy after I've iced them. It seems like the icing sinks into the cookie and makes it moist or something. What am I doing wrong? I just want nice crackling cookies icon_sad.gif

What are you icing them with? I would think perhaps the cookies aren't being cooked for long enough - try turning down the heat of the oven and cooking them for longer so they're really dried out. Then ice them with royal icing. Good luck

Maybe that aren't cooled enough and the icing is kinda melting.

I too think you need to turn down the heat and cook them for longer - good luck!

Thanx for your advice! I've always wondered about that: once the cookies are baked, and you open the oven to check, should the cookies feel hard already or is that something that needs to happen once they're cooling off? Cause with me they're always still pretty soft so maybe that's the thing.

Mine are not browned nor hard. I leave them on the sheet to cool or them will crumble. But I've never had one go soft.

It's an extra step but I always pull my cookie sheet out after baking and flip the cookies over and bake the top side for an additional 5 minutes on 300 degrees. Wait at least 2 minutes before flipping because sometimes the cookies are soft and will break. It firms up the entire cookie AND the royal icing will not seep into the cookie as much making it even softer - especially since they have to sit out so long to dry.
