Cake Recipe, No Wheat?

I have a mom that asked if I could find a cake recipe that has no wheat or milk in it. Her almost 2 year old son is allergic to both. Apparently they had a professional baker try one last year and after 6 failed attempts (they all fell apart) he got a rice krispie square with a candle. awwww. any suggestions??????

Does he have a gluten allergy? If so there were a couple of threads about 2-3 weeks ago that you can search for. There was lots of info and the difficulties in making this type of cake and a couple of recipes. Also know that some people have such a severe gluten allergy that you can't even use the same utensils that have touched things containing gluten (even after thorough cleaning icon_eek.gif ). Check out those threads and see if that helps. Also confirm exactly what type of allergy he has. Much better safe than sorry! icon_smile.gif

Hi - I'm new here, & absorbing all the terrific information on this site. Thought I'd chip in, here...

Years ago I use to make an almond torte - I lost the recipe, but this looks similar: http://www.joyofbaking.com/ChocolateAlmondTorte.html

The one I used to make was so delicious - enough to make a kid very happy (and the adults, too). Also, I've seen some torte recipes that call for cream or milk - in that situation, your mother could substitute soy cream (I can find it in most of the grocery stores here), or rice or almond milk (I think the soy cream - forgot the brand name - might work better, because it's richer).

Hope this helps (hoping the little guy doesn't have to end up with another rice krispee for his birthday!)

Just a caution about the recipe taza suggested-children under 2 shouldn't be exposed to nuts and those prone to allergies should wait longer for exposure. also I think from reading those earlier posts you have to get special extract too.

this is right up my alley! My son also has severe food allergies and here is a chocolate cake recipe I made for him:
1c. barley flour
1c. sugar
3tbs. cocoa powder
1tsp. vanilla
5tbs. canola oil
1/2c. rice flour
1/2tsp. salt
1tsp. baking powder
1c. cold water
preheat oven to 350. combine ingredients and blend very well. pour batter into a 9" pan, square or circle, bake for 25 to 30 minutes. for two layers, double the recipe.

notice, this cake also has no eggs which my son is also allergic to. when cooked it kindof has the consistancy of rich chocolatey corn bread. I found it quite yummy. As one of the previous posters said, with a kid with allergies like this you must be sure all of your equipment is very clear of possible allergens. I am sure though if the mom asked you to make this cake, she trusts you very much. and of course, do not use anything with nuts, not just peanuts, no nuts must be the rule for a little guy like this.

Other types of flour can be used in place of wheat flour. Just do a google search for differant types of flour and it should tell you the types and how to substitute them. Heres one that I found:

There is a book GlutenFre Gourmet dessert cookbook by Bette Hagman seems to be good book she has several recipes for non wheat "flour
