Filling For Coconut Cake

I was thinking of making a filling with sweetened evaporated milk, coconut, and chocolate. Anyone have a recipe? It is to go in a coconut cake.

I posted this a week or so ago. The filling got rave reviews at work, someone said they would love to just eat the filling by itself. I put it in a white cake covered with coconut buttercream, but it could go in any cake I think.

12 - ish ounces cool whip or extra creamy cool whip
1 small box instant vanilla pudding
2 T. coconut flavoring
2/3 C. coconut flakes
2 t. merengue powder

Whip all together for about 2 minutes on high, until completely blended.

I bet it would work with chocolate pudding too... mmmm

Wow, this recipe sounds great. What brand of coconut flavoring did you use? It must not have been Lorann because 2 tablespoons of that would have been really strong. Thank ya much....

That sounds yummy!

Guess I should have mentioned, it needs to be able to be left out. I have to take it 4 hours away. I thought about doing ganache and may still do that, but I have no cream and no milk, not even canned milk. The closest store charges $5 for a gallon of milk and the other store is 20minutes away. I was just trying to be lazy...I mean resourceful...and not have to go to the store. icon_smile.gif

butternut,
I got the coconut flavoring at a local cake supply store. They sell lots of flavorings in 4oz bottles, there's no brand on them. I think they buy in bulk and split it up. Sorry I can't be more helpful about that! But it would probably be closest to the McCormicks stuff from the grocery store. Probably best to start with a small amount and taste as you go.

As far as leaving the cake out, hmmmm. There's been some debate weather cool whip can be left out when mixed with other ingredients here on the formums ... I

've seen some posts recently about using those individual pudding cups that are sold at room temp. Maybe a bunch of those with coconut flakes and coconut flavoring would work too. Plus it would be REALLY easy to put together!
