Please Help!!! Serious Crumb Issue! Urgent.

I am frosting my cake and it seems to be coming apart as I frost it... Everytime I put the spatula to it with a bit of frosting the frosting just doesn't seem to stick to the cake, but it takes a chunk of cake with it.

What have I done wrong?

Is my cake not dense enough? Too fresh maybe?? Or is my icing to thick?

how long did u let it cool? did u try putting it in the freezer or refrigerator? other ideas anyone?

Hi Elle,

Your icing may be too thick. If you aren't using the large icing tip #789, you can thin your icing with corn syrup or water. It does help if the cake is chilled a bit too. Good luck!

You may be able to salvage this cake by putting it in the freezer for a while - then when firm take it out and try again. I would also try a crumb coat with a very thin/soft frosting, back in the frig then the final frosting.

I let it cool a looong time.

I stuck it in the fridge now to see if it sets up a bit, and I am going to try and thin my icing. I will let you know how it turns out.
