I'd like to know if anyone uses cream cheese Icing to decorate and have you used it on wedding cakes. Was it alright? I'm looking for a change from the too sweet buttercream recipes. How would it hold up? Thanks.
I have used crusting cream cheese icing before, but never on a wedding cake. It tastes good but is softer and doesn't hold up well in hot weather.
I have used a crusting cream cheese recipe and it worked fine. I recently did a wedding cake that was italian cream. I ended up filling it with the cream cheese icing and frosting the outside with my regular buttercream.
I would think the icing would hold up fine if you used a crusting recipe.
I've iced cakes in cream cheese frosting, no issue. The only thing is that I tell the bride prior, it doesn't get as smooth of a surface as buttercream, but I try and get it as smooth as I can. For best results, ice a cooled cake, and refridgerate after it's iced. It doesn't do well in warmer weather conditions.
I've used a cream cheese icing on a wedding cake in june and in AR. Not good. It was VERY soft and didn't hold up well. I even used the crusting recipe.
