Disaster...almost Every Cake I Bake!!!

I just want to cry icon_cry.gif I started out so good. Every cake I made never fell, I had no problems. And now a few weeks later it seems every cake I bake is a mess that I have to try and save. For example the one I just made today exanded and made a mess all over the inside of the oven. I turned down the temp and had it in the oven for almost an hour longer. It finally finished baking. It is sunk in the middle, like the last 5 cakes I have made. I put a flower nail in the middle, I even used a bake even strip. I have been using the wilton performance pan 8 round 3 deep.

Have your tried testing then temperature in your oven to see if it is accurate? Seems to me that if you have been baking in the past with no problems and then all of a sudden your cakes aren't baking there might be something wrong with your oven. It's worth checking!

I agree. Invest in an oven thermometer. You can get one for under $5. Also, don't over fill your pans.There is a chart on here to give you batter amounts for your pans. I always measure out my batter rather than eyeball it. I know the 3in pans take longer to cook and don't open the oven and mess with the cake until it is done because I have found that will cause sinking. Almost ruined a chocolate cake the other day because I was trying to move the pan and bumped it too hard and it sank a bit. You'll learn how long it takes each of your recipes and pan sizes tocook and then you're all set!

Those are all great suggestions. I will try them all. Thanks for your help. It is so dissapointing when that happens. I managed to save my cake. It doesn't look that great. I just had to do some patchwork. Good thing it is just for family. If it was for anyone else I would have tossed it. I think maybe I did overfill the pan, now that I think of it.
