Please Help With Royal Icing

Hello Ladies,

Tonight I tried making the royal icing recipe found in the wilton's book and it said that the recipe should yield 3 cups. Well, I think mine only yielded 1 1/2 cups and it tasted just like powdered sugar. I mixed it in my Bosch mixer for 7 minutes and I reduced the water by 1 T like the recipe said. Any idea what I did wrong? I have no clue how I could botch up such a simple recipe.

It does taste pretty sweet, how much p.sugar and meringue powder? What was the consistency like? I don't think you botched it, I remember mine seeming to come up short on the amount also.

I don't know why it didn't yield the amount stated but I can say that the flavor you are talking about is what it tastes like. You would have to add some type of flavoring to change that, but just make sure you don't add a flavoring oil because that would break down the royal icing. Maybe some type of alcohol based flavoring. I haven't added flavoring to mine yet, I really don't work w/ royal that much. I hope someone else out there has some more suggestions and more experience.

I also remember the first time mine was short but also runny. After trying to figure out why- the conclusion was my spatulas had small scrapes in them and just a small amount of shortening residue made it soupy, so now I have a separate place for royal icing stuff.

One question, it may be stupid- did you sift the powdered sugar??? It does make a difference with the volume . at least it semms that way.

I think, when I've made mine, it made about 3 cups.. I usually double the recipe and I have a glass pyrex bowl that has a plastic lid cover that I put it in and it was totally full ... it should be kind of fluffy and yes, it does taste like powdered sugar ... I mean that's all it really is w/the powder egg whites and water added ... what speed did you mix it on? I mix mine not too far from the highest speed on my KitchenAid mixer that I use .. How many tablespoons of the powder did you use?

This was the recipe that I used:

3 level TBL of meringue powder
4 cups sifted powdered sugar
6 TBL water

Beat on low for 7-10 minutes until icing forms peaks

*when using a large counter top mixer use 1 TBL of water less


The one thing that I totally didn't see until now is the sifting part. Maybe that was the problem???? I will try again and see what happens. Thank you for answering my questions!

I always come up short also , but since the royal dries so hard a people rarely eat it I wouldn't waste money on the flavorings

Some people do eat it.I think it is mainly kids though.

I made some pink and purple flowers for my dd birthday cake,and when I got the left overs home all of the flowers were picked off.lol

As for flavoring I used almond flavoring,it gave it a cherry flavor.

I don't make royal icing very much because the smell of the merengue powder kind of clings to the bowl and I think the smell is disgusting.I am very sensitive to odors, especially in foods.
I also never put merengue powder in my buttercream because I think you can taste it.

i have to agree about kids eating it. every time i do a cake for a child, i use royal icing flowers.

Royal Icing is hard to figure out at first. Once you figure it out you will make it all the time. I love doing RI flowers. I make so many flowers & then freeze them. When I need them I just pop them out of the freezer. So don't get discouraged! You'll figure it out!

I LOVE royal icing decorations! I'm occasionally tempted to buy the premade decorations at the store just to eat icon_biggrin.gif
