I made a n "Old Fashioned" chocolate cake from a recipe that I found online. It called for powdered cocoa and boiling water. Well, all said and done, the cake turned out gummy. Any ideas as to what happened? icon_sad.gif

Maybe you undercooked it? Or forgot some of the levening ingredient(baking soda or baking powder)?

The recipe said cook 55-60 min. I actually ended up cooking it for nearly 1.5 hrs. before it appeared to be done. I put in the baking soda. ??? Do you think the cup of boiling water contributed to the gumminess?

I think the boling water is to disolve the cocoa powder. Maybe your baking powder or baking soda ingredients were off? icon_confused.gif

yep that's what Euphoriabakery suggested as well. Maybe, I will try the recipe again and get new baking powder. I was just really disappointed. Thanks.

I don't think it was the boiling water. I use a recipe that calls for boiling water to add to the cocoa and I wouldn't use any other chocolate cake recipe. I agree that it maybe the baking powder.
