Extender With Carrot Cake Mix

Has anyone tried cake mix extender with carrot cake mix, and if so which recipe? and what were the results. I need A 15 in heart shape carrot cake, pan instructions say about 11 1/2 cups batter per layer, 2 box mix is roughly 10 cups, I only have 1 pan so I dont want to waste another box for 1-1/2 cup.

I have never seen a mix for carrot cake! That's a new one on me! I'm not sure that I would use the extender. I don't know how the sour cream/yogurt and extra sugar would affect the taste. I'd probably use another box and just make a small carrot cake to take to work or give away.

Dodi!! icon_surprised.gif You've never seen carrot cake mix?? LOL



I've never used the extender for a carrot cake, but if I was, I would use it just like the recipe except I would also add some shredded carrots and some cinnamon.

Denise,
I just looked at the recipe for the extender and this may sound dumb, but do you add this to each cake mix you use? Or just do this once, adding it to your two cake mixes? I'm not clear on that? How many batches of extender per cake mix? or does it matter?

Hi Sweetcakes!!

You use only one cake mix + ingredients called for on the box + the one extender recipe.

I use Duncan Hines cake mix so this is the total recipe w/extender for a white cake to give you an example.

1 duncan hines white cake mix
1 1/3 cup water (I always use milk instead of water in all my cakes)
2 tablespoons veggie oil
3 egg whites
1 egg
1 cup flour
250 ml (or 8 oz.) sour cream or yogurt (I prefer to use low fat yogurt)
1 cup white sugar
1/3 tsp. salt
1 tsp. vanilla or other suited flavouring

Denise, so when baking a 12 by 18 to extend the batch would you make 2 cakes mixes and only 1 extender or would you double both to equal 3 cake mixes.
