If I cut a single layer sheet cake in half and put lemon filling in the middle will the cake get to wet from the filling. Will it make it too moist and mushy?

That all depends on exactly what you are putting in the filling. I make a Eagle Brand & lemon juice mixture that is more like a pudding - not soggy.

if you put a real thin coat of buttercream on the cake before the filling you should be fine.
