Strange Question - Why Did My Cake Not Have Any Problems?

I usually make boxed cake mixes and have problems. Middles not getting done; really pointy teepee-like middles; stuck to the pan - you know the type. icon_sad.gif
Yesterday I made the Hershey's Black Magic Cake.
THERE WERE NO PROBLEMS! WHY?!
I used the same pan 9 x 13 glass, greased and floured the same, the temperature was the same.
Aren't cake mixes supposed to work, and scratch recipes iffy? icon_confused.gif

Try the recipe again and see if it was luck, but my guess is that you are just good at scratch cakes!

I just read in another thread that some people have more problems when they flour the pan than when they just use spray or some sort of grease alone, maybe see if that makes a difference?

Maybe you have the "scratch cake touch"! icon_wink.gif There are times when I have them turn out just fine ~ it's the times that they don't that I have issue with! icon_confused.gif (and never knowing when that will be!!) Congrats on your's turning out. thumbs_up.gif

boxed cakes can get old. those wont bake well at all. maybe you mixed it for the exact time this time. i wouldnt say its luck...i would say its practice. all cakes..scratch or not is practice. you cant overmix or else something will be wrong with it. mix time is very important in cake making. undermixing is bad too. they wont come out how they are suposed to.

I only make scratch cakes and mine always come out great. Maybe you are just good at making them from scratch.

I feel the same sometimes. I make both scratch and boxed cakes. Although my boxed cakes are far removed from your normal box mix once I make all my additions. I don't think I have ever had a dscratch cake completely not come out right, now I have had recipes that wee too dry or what have you. And I ahve forgot an ingredient and had issues, its bad to leave out the baking powder!

But in my experience scratch recipes have not been any iffier than boxed cakes. And I think they take about the same amount of effort to make.

The reason I still use boxed mixes for some cakes isn't because I can't make a scratch cake but because I really like the cake that results from a certain recipe which happend to include a cake mix.

I disagree about scratch recipes being iffy. and theHershey's cake (if it is the one on the back of the hershey's box) is awesome.

If you like the Hershey's cake try the chocoalte layer cake from the recipe section on this site, it is so good that I no longer make any other chocolate cake!

Yes, I think it is on the one on the back of the box. I found it through a chocolate cake contest. It is WONDERFUL!
I used it to make my retro cake. It was the first time I trimmed a cake into shape, and it worked very well. Not to mention the 'kids' fought over eating it. icon_biggrin.gif
