Frosting Question

Hi,

I am in a panic; I had to make royal frosting for my daughters class for their gingerbread houses. There are 48 kids and they already have graham crackers hot glued to the milk carton so all the kids have to do is add the roof with frosting and the decorations. I made a double batch and a single batch of frosting. Do you think that is enough? When I brought it to the school the teacher asked if it would be enough. I was nervous about it until then. I thought that it would be enough, but now I need your advice. to make me feel better!

Well, how much icing do you think they will use for each gingerbread house? About a 1/4 cup each? A double batch and a single batch should make about 12 cups. If so, then that would make the exact amount for 48 houses.

If you think they need more than 1/4 for each house, then it might be good to make another single batch or so.

Thanks for the advice! The teacher called me after they were done and said that the amount that I made was very close. She said for future reference that I should make 2 double batches and then they would have enough. Oh, well we can always try again.
