Hi everybody,

I'm new to CakeCentral. I've just finished Wilton Course III and am starting my second wedding cake. This one has the diamond pattern with pearls. I was wondering if anyone could give me any tips on making this cake, especially what size pearls to use. Thank you in advance for any help! icon_smile.gif

Welcome! Is the cake covered in fondant? You should be able to use a press pattern to imprint the diamond design on the cake. How many tiers is the cake? Are you making the pearls individually by hand or are you using a mold? If you're using a mold I would use an 8mm mold. Anything less than that then the pearls would be lost on the cake and barely visible. Anything larger than that would just look too funny. If making them individually I would use a tip #12 or smaller. I've never made mine by hand, I've always used a mold.

Are you asking on how to make the pearls and what size ?
Pearls can be made out of Fondant...either by hand or mold. I do mine by hand then paint it with Pearl Dust... is that what you're thinking of doing ?

Beautiful cake! She chose an easy one for you. Making them by hand will probably be easier. I don't have a tip inbetween 4-12 to see which size to use. Some other ladies here might be able to tell you which one. Have plenty of "super pearl luster dust" on hand. I can't wait to see it. When is the wedding?

I took the order yesterday and the wedding is June 25th! icon_eek.gif I thought that because it was so soon, that I might order the pre-made pearls online, but couldn't decide what size to order. I don't know if I have time to make the pearls by hand myself.

That could become a time consuming process. Make sure you charge adequately for having to order the pearls! Can't wait to see the finished product.

I would order 8mm pearls. 4mm maybe to small to see from a distance.

Hi, I also have a cake that requires pearls but instead of a mold or by hand I bought mine and the pearl dust. I put all the pearls in a bag with the dust and just shook. Real easy. The pearls come in many sizes just go to your local bakery supply store or go to kitchenkrafts.com they have everything. Hope this helps.

Do you have to order them online? I remember when I used to make Christmas cookies with my mom she had a container of silver ball things. Does Jo Anns or Michaels sell them?

Unfortunately the silver dragees are hard to find now a days. My cake supply shop had to quit carrying them.

I bought mine at AJ's in Warner Robins GA. I got like 400 to a pack for 3.25. AJ"S doesn't have a web site wish they did. But try searching i'm sure you will find some.

Most edible pearls purchased online or at your local supply store are not going to be cheap. At my local supply store that cost between $10-$15 a bottle. You may luck up and find some on ebay for cheaper but that's rare.

I was on eBay today and found some gold and some silver dragees. The bidding was at about $2.50 for a 4 oz bag at around noon CST.
