My question is, do you always put some sort of filling in your cakes? I put filling in the traditional cakes (carrot, german choc etc.) so far I have done mostly sheet cakes and had one person ask me to put in filling. Do you guys automatically put in filling or do people ask you to do it? Im always afraid to put in a filling that no one asked for and they hate it.

I prefer to put filling in my cakes as they greatly add to the overall flavor of the cake. When taking orders, I ask customers what filling they want.

most of my orders have been sheet cakes as well. I always offer fillings, but much of the time the customer just wants regular buttercream. I think a filling adds so much to the cake!!

Only if asked.... icon_smile.gif

I found something funny though.. I am from Puerto Rico but learned to do cakes here. Now, people here in the US like the cakes with some kind of filling or at least most the ones I have done cakes for...

But, I've had people from Puerto Rico asked me to make them WITHOUT a filling... I was like, what? you don't want something in the middle? icon_surprised.gif Because you see, that's what I am used to doing. But nope.

Now, I have gone to hispanic weddings, Quinceañors (equivalent to a sweet 16 here), etc. and the cakes don't have any filling.

Sorry, maybe I gave you more info than you needed icon_redface.gif , but just to let you know that it depends on who you make it for.

So, don't put a filling in the cake unless they ask. icon_wink.gif

I always ask what kind of filling the customer would like. Even if it's a sheet cake, it can be torted and filled, even if it's just a layer of buttercream. If you make a list of all of your cake and filling flavors, you can provide it to the customer when you first discuss the cake.

I do not fill 2" cake, however I do offer a filling for 2 layer cakes. My basic one is just buttercream and then for an additional charge I can do one layer or three layers of filling.

I always discuss fillings for a cake when I take any order. I have found that it really does depend on the situations. Most birthday cakes I usually just do a regular buttercream filling. If the party is for a small adult gathering of some type then a filling is usually ordered to make the cake more "grown up." For wedding cakes, it really depends on the money for the cake. A great way for brides to save money is to skip the fancy filling and just do the buttercream!

I love to put fillings in cakes. They add so much more flavor to the cakes and there are so many different options to choose from but usually I ask a customer if they would like a filling and if they do I simply name off the fillings thay can choose from. So far I have only made one cake w/o any filling. It was a full sheet cake that was for a grad party. I did make a 1/2 sheet cake with filling in it once though. So really its up to the customer...

Are you all talking about torting a single layer cake or are you talking about the filling between two cakes (i.e. wedding tier)?

I always put filling between 2 cakes (wedding tier). I never ask 'em .... I just do it. I can't imagine doing one without it.

For sheet cakes and single layer cakes, I do not automatically tort and fill. I dont' even ask about it. If they want it, they tell me. If they dont' tell me, it's not torted and filled.

Im mostly talking about sheet cakes and single layer cakes. I always put a filling between two cakes. And its usually butter cream/cream cheese (whatever is on top of the cake) I would like to do more fillings in cakes but I guess I will only do it if someone asks (or for my own family) thanks for all the input.

I've always wondered about this too! What other kinds of fillings do you all use? I've used buttercream, cookies and cream, sweetened whipped cream - but I wondered what else is popular? When you say filling, are you talking about puddings, mousses, fruit - I'd love to know!

When you add a mousse filling does it have to be put in the fridge once been torted? I've never done a mousse typw filling and will be adding a cheesecake mousse filling and wasn't sure if the cake then had to be kept cold. Sorry for pushin in on the original question. icon_redface.gif

I never put fillings unless requested, and especially not in sheet cakes. I personally do not like two thin layers of cake with filling and icing...I prefer more cake than anything else. (Regular cakes I put a thin layer of buttercream between layers.) To me, filling and icing is too sweet. For wedding cakes/tiered cakes I do offer fillings. For party cakes that are not 3D I don't mention fillings but gladly do it if asked. For 3D cakes they automatically only get buttercream of course. For sheet cakes I never fill unless they request a torte and fill.

Just my preference and everyone seems happy with it. Rarely does anyone even think or care to ask for filling, at least in my experience. However if they do ask, they get it.

I will put fillings in but I charge extra and only if they ask. I do alot of aheet cakes as well and don't find it very convienant way to remove the layers to fill, I would like to know others methods....Also I charge extra for a filling, usually the same price for whatever the kind.

The premade fillings in the pouches do not need to be refridgerated after you fill the cake. You do need to refridgerate the unused portion so it lasts (up to 3 months)or it can be frozen.

I offer filling for an additional charge. (fruit, bavarian cream etc.) Otherwise I would just use buttercream for a double layer cake.

I agree with Kitagrl, I have only had one person ask for a filling in a sheet cake. I guess most people don't think to ask. Also, I kind of agree that it would be too much in between a sheet cake. But it hasn't stopped me from looking at all the yummy looking filling recipes on here!!
