Pineapple Wedding Cake? Hurry Pls!

I've got this wedding to do that will be outside (cake too) in this heat. I wanted to do a pineapple cake (my 1st one). Will this be sturdy enough for a 3 Tierred Wedding Cake? Does anyone have a good recipe for this? Also what about the filling? I whought about a Rum/Pineapple filling, but just an not sure. I have to decide today! icon_smile.gif ANy comments are very welcome :gift: TYIA

Here is a recipe I love to use. Tastes great and has the texture of carrot cake so it is very sturdy. Easy to mix up, too. I have used it for stacked cakes.

Hawaiian Wedding
Cake



Get ready to do the hula! Good with cream cheese
or sour cream frosting.



Ingredients:


1 1/2 cups white sugar
1 teaspoon baking soda
2 cups all-purpose flour
2 eggs
1 (20 ounces) can crushed pineapple with juice
1 cup chopped nuts
3/4 cup flaked coconut


Directions:

Preheat oven to 350 degrees F (175 degrees C). Grease one 9 x
13 inch pan.

In a large bowl, mix sugar, soda, and flour by hand. Mix in eggs,
pineapple with juice. Stir in nuts, and coconut. Pour into
prepared pan.

Bake for 35 to 40 minutes. Cool on wire racks.
Makes 1 - 9 x 13 inch cake

You might want to try a cream cheese icing for the filling. Add some drained crushed pineapple, but I dont think that would be necessary. Be sure to line your pans with this recipe. The layers will pop right out. Sorry for the funky format, I was lazy and just copied and pasted. HTH
