What Is The Purpose Of Glycerin In Fondant?

I notice in Toba Garrett's recipe it is "optional". Why would you want to add it, or why would you want to omit it? How would the fondant be different with or without it?
Thanks!
gylercrine does stop it from drying out but also gives it that little bit of strech.. try michelle foster's delicious fondant recipe... its better then tobas
Ah ha! That makes sense. Thanks for the help! have you ever combined Michelle Foster's fondant with gumpaste to use for modeling? I would like to try it but want to know if it would be a good combo first. Thanks!
Can light corn syrup be substituted for glycerine?
I wouldn't think so. Maybe you're thinking of glucose? You can sub regualr corn syrup for glucose as long as you reduce the water by 1/3 (this is per The Cake Bible).
