Hi my fellow Cookie addicts,
Last year, I made two mini tutorials on how I go about making cookie pops. Recently I have been seeing the same type of questions about how thick to roll your dough, inserting cookie pop sticks, and what to do if you don't have a particular cookie cutter.
In this thread I have combined the two mini tutorials so it's a bit more convienient for those needing some answers.
Part 1: Uniform cookie thickness
A number of you have private messaged me asking how to roll your dough out to a uniform thickness.
Here's a trick that I use.
Pic 1:
I roll my dough out between two sheets of wax paper. This eliminates the need for any flour when rolling the dough out. Adding flour to roll your dough out may change the texture of the cookies.
This is how I accomplish rolling my dough out to a uniform thickness:
Pic 2":
I arrange my 'spacers' around the outer edges of my paper. This ensures my dough is never thinner than which ever object I use as my spacer. In this case I am using plain old cookie pop sticks. I was out of dowel rods. You can go to your local hardware store and buy some molding also. Also, CD jewel cases will work as well just clean them before and after use.
Pic 3:
Lay the second piece of wax paper on top of your dough and roll the dough out as you normally would. Oh I forgot to mention, make sure your rolling pin is not tapered if not it this will not work. I use my Wilton Wide Glide fondant rolling pin. It has a uniform diameter.
Pic 4:
Finally, when all my dough is rolled out I place them on my cookie sheet and put them in the freezer to set before I cut them out. This helps to minimize spreading.

Part 2: Cookie Templates and Inserting sticks
First I will either print or draw the outline of the shape I want to use. Then I cut the shape out. I cut slightly more than the outline of the image. In other words I do not cut right on top of the outline.
Pic 1:
Once my outline is cut out I remove my dough (already rolled out to the correct thickness) from the freezer and I place the outline on top of my dough. Using an exacto knife or a paring knife I carefully cut around the outline. And I remove the excess dough.
Pic 2:
To insert my cookie stick I place one hand on top of my dough that has been cut out. With the other hand, I insert the stick from the base of the cookie. Placing my hand on top of the dough helps to keep the dough from bunching up and I can feel how far into the dough the stick has been inserted.
Pic 3:
I then flip my dough with the stick over to check to see if the stick has penetrated or split the back of my cookie dough. If it has, then I take a piece of excess dough and simply patch it up and it's good as new (Pic 4).
Pic 5:
Then I flip it back over and place it on a parchment lined cookie sheet. I chill my dough again before placing it in the oven. This keeps spreading to a minimum.
Tip within a Tip:
The outlines I really like I tend to laminate so that I can clean them with hot soapy water and a little bleach and reuse them.

THANK YOU - you posted these great instructions at the perfect time for me. I am planning on some cookie bouquets for some of my vet friends for July 4th; last time I did them they didn't look so great (a book crooked and some fell off).

Cake_Princess, where did you purchase your clear cookie wrappers from?
The Bulk Barn, it's the small bags they use for spices. The owner of the store I go to sells them to me. They did not have cookie pop baggies that would fit my cookies.
if i want to make a cookie with a character design...do i have to draw on the cookie one by one?? is there an easier way?? im not much of an artist...thanks!

Use Piping gel to transfer the pattern.
