Hi - I have a question for anyone out there that would be willing to help. Today is Wed. and I am making 2 16x16 square cakes for a lady this weekend. She wants them on sunday. I was wondering how early i could begin to decorate them before it was considered to early to decorate?

Will the cakes be in the freezer until you ice and decorate them? What kind of icing will you be using?
If you're using fondant or buttercream, I'd say that you could ice and decorate them as early as Friday and you'll be OK.
