I have to make a Red Velvet cake tonight...I have bought the cake mix and want to try doctoring it. I have searched high and low for the CakeMix Doctor recipe book and can't find one. Will someone please tell me if they know how to doctor Red Velvet!! Thanks a bunch!! icon_rolleyes.gif

hi. ijust as how you doctor any other cake mix. I use the extender recipe or the ehnanced formula really good..... thumbs_up.gif

The Cake Mix Doctor book calls for German Chocolate Mix, then add red coloring.

For the red velvet mix, I would use milk or buttermilk instead of water, chocolate pudding and 4 eggs and 1/4 - 1/3 cup of oil. I always add a bar of melted German Chocolate to mine, and it adds a lot of flavor and richness. But I think with the instant chocolate pudding and milk it will be good. You could also use 1/2 cup sour cream and the rest milk. Good luck!

You can also go to the website www.cakemixdoctor.com and do a search and it will pull up the recipe that you are looking for. Most of the time, the recipe is in a newsletter so you might have to look through the posts for it. I have made the Cake Mix Doctor Red Velvet Cake quite a bit. It is one of my most popular cakes.

Tiffysma...if I use the bar of German Chocolate melted do I cut back on anything else?

I use chocolate pudding and extra egg for red velvet. I also replace the water called for with buttermilk.

Sorry, had a dental appointment and had to run. No, I don't cut back on anything else when I add the melted chocolate - just let it cool a bit. I use melted chocolate in my chocolate cakes too.

Well ladies just to let you know...I did tiffysma method...only I didn't have any German Chocolate so I used a king size Hersey bar...I didn't get to taste, only the crumbs when I torted it but it looked very moist and seemed to turn out quite well!! Thanks for all of your help...I am going to try one of the family this weekend, but this could be my new method!!!!

Glad to hear it turned out okay. I really like that method, seems to add not only moisture, but richness to a cake. Really makes it taste like home made.
