I just made the WBH Yellow Butter Cake. The flavor is wonderful.. however.. when I baked it.. I made 2 8" rounds and 10 cupcakes.. some of it came out really wierd. Sticky on the top.. greasy in some spots.. some came out perfectly fine. One of the rounds came out great and one came out a little funny. I have NO idea what went wrong. The only thing I can think of is that I measured and sifted 3 cups of the flour and then I saw it needed 3 and 1/2 cups so I measured the 1/2 cup but didn't sift it. Could that have caused this to happen? The other 2 WBH butter cakes (white and chocolate) that I made were both perfect so I would assume that this one would be good too. I was kicking myself when I checked on them. Help me figure out what I did wrong..

sounds like a blending problem. Sifting all the dry ingredients and then alternating the additions is critical.

Thanks for the reply.. I think I am just going to try again. this morning and see if goes any better. Seems like my luck this week. I made a cheese cake and only added 1/2 of the cream cheese (did realize it until AFTER I baked it icon_mad.gif ). Ah well.. more cake for us! LOL.
