I keep trying to convince my hubby to move to a bigger house with a granny flat so I can have my own kitchen just for cakes. He is not to keen right now.. oh well.. I still have my beautiful recently renovated licensed home kitchen here anyway, just would be nice not to have to use it for home and work!
I wanted to ask what stand mixer do you have that is 10 quart size? I have a kitchen aid kp2670 6 qt stand mixer and sometimes it is struggling with my workload and wondered what brand etc you use on your 10 qt one?

Keira, I use an Anvil MIX7110 10 Quart Mixer W/Guard. Found a good deal online. Works great.
OH MY!!! Congratulations!!! Your renovation looks great! Best of luck to you! Where are you in NY? when I called the Dept. of Agriculture a few months back, they told me cake decorating didn't fall under their jurisdiction and i'd have to speak to the Dept. of Health.
Thanks!! I'm in Hyde Park, Dutchess County. I also do chocolates so there were more guidelines to follow. Don't know why though. As you probably already know, jurisdiction varies depending on your location, but it also varies from county to county also.

Congratulations!!! on your new kitchen it looks great. my husband is doing our basement and our layout is just like yours, i wish i was able to do that, but tight on the money. but at least i get to have a storage area that is going to be just for my cake things so i can get them all out of our kitchen and it well be all in one place. i wish i could get what you have, but it's not my time yet but thats ok cause god is watching over me and when he think it's time he'll let me know.
i was looking at your photos in the gallery you do some great cakes, but when i looked at you web site i didn't see them their. now that you are license you should go all out put your photos everywhere so that you will be known i am so happy for you....congrates again

No, since I'm only doing baked goods and chocolates, I don't generate enough greasy wastewater to need one. (thank goodness)

Thanks! You really have to market yourself. The more aggresive I am, the more orders I get and vice versa. It seems to be a bit of a slow process right now but I'm looking forward to Sept. to kick some new products off. A friend of mine has a vending business and offered me a slot in his machines.!!! So, I've been making cookies for him to put in the machines and they've been selling. (it's been 3 weeks so far). I will be working on a coffee cake to market next.
The kids are all in school, So I do have a bit of time to work. Also, DH has been very helpful and supportive!

My husband keeps kidding about knocking out a wall and expanding my kitchen, or building me a shop! But, I am just too timid yet to take such a big step! As someone else said you have to "recoup your losses". And for me, that just seems like a whole lot of cake to sell before you see your money back, also...not sure of codes and regs for State of TX!

Since you work from home, a basement at that, do you deliver all of your products? If so, do you charge for delivery?
It's about 50/50. The only time I charge for delivery (just delivery, not set up) is if it's out of my way. When I know someone will need delivery, I will usually work it around other errands. Otherwise I charge a flat rate of $15 within 10 miles and $1.50 per mile thereafter for delivery.
