Ok, I have read about adding pudding to cake mixes to make them moist so this is what I did. I mixed the mixture and put it in cup cakes and then baked. The rose and looked just fine until I took them out of the oven where they sank a little. When the cakes cooled I cut them in half and the inside looked squishy like they were undercooked. They were not however under cooked. Maybe I am getting the ratio of the mixture wrong.

My cake mix is 750 grams and I followed the instructions, I added 300 mls water and 3 eggs. The I added the pudding mixture which was 100 grams and added an extra egg.

Can some one please tell me what I am doing wrong as I need to bake these cakes for the week end

I had the same problem, then I stopped adding the extra egg. (I actually forgot to add it once...happy accident). I also purchased a thermometer for my oven and discovered it was not up to temperature, so now I also set my oven about 5 degrees higher. Hope this helps.

i haven't done it with cupcakes, but I use it for my cakes, but NEVER add an extra egg and it comes out just fine. I would try again without the extra egg and see what happens.

For whatever reason, adding pudding mix when making cupcakes results in too much moistness and falling centers.

I have used leftover batter from a cake to make cupcakes...the cake turns out perfect, the cupcakes fall in and are almost gooey. I, too, add only the pudding mix, no extra liquids or eggs.

When you say you added the "pudding mixture"....you just added the dry pouch...right?

Yes I have had poor results with cupcakes too. They are not gooey but they just do not stay puffed up.

Instant pudding only, I believe.

I also find that sometimes when I doctor a cake mix and then make cupcakes with the extra (not even always having pudding in it), the cake is fine and the cupcakes get flat when they cool.

I too, like the others, never add any extra liquid....and don't seem to have a problem. Although, my cupcakes never seem to be as nice and fluffy as the cake is. I wonder if they are just cooking too fast or something? Truly I think you need a degree in psychics to figure out your kitchen, especially baking. Wow!
