You know the large chocolate bars you can buy at the store from Lindt and Hershey and other chocolate makers...can I melt that down to make ganache?

i do lindt and ghiradhelli all the time and only Hershey's Special Dark..reg. eeeewwww

Any chocolate you like to eat makes great ganache. Milk chocolate needs a larger amount of chocolate to cream- use less cream or add more chocolate. White chocolate needs even LESS cream.

If your ganache is too thin, chill it a bit, or add more melted chocolate. A blend of milk and dark chocolate makes a great tasting ganache.
