I really want my daughter's birthday cake to have chocolate icing, but want a really nice dark look to it,like you would get with ganache. Any suggestions on how to acheive this?
I was just going to suggest the special dark cocoa, but kadsandkids beat me to it. I really like the chocolate syrup frosting but I have only made it with regular cocoa. I will bet it would be wonderful with the special dark cocoa!
Thank you guys! I've never even seen that but I sure will look for it.
Is the chocolate syrup recipe in the recipe section here kerririchards?
Go to www.cakecentral.com/cake_recipe-2033-0-Chocolate-Syrup-Frosting.html for the recipe. I found a box of the hershey's special dark cocoa in the baking aisle at SuperTarget. I had been looking for it for a long time without being able to find it, but it just magically appeared one day. So I bought a box. I should probably get another 2 or 3 just in case it magically disappears.
I haven't been able to find it either!! Kerri do you think "regular" Target has it? Anyone know where I can get it online? I didn't even see it on Hershey's site. My sis lives 30 min. from Hershey and she can't find it for me.
If you look at my photos you'll see one with chocolate basketweave. To make it dark I used extra chocolate (baking chocolate, not cocoa powder) and a tiny bit of black coloring. HTH!
Try this link. This is the best chocolate frosting I have ever tried. I have done a couple of wedding cakes with it and you could literally smell the cake halfway across the reception room. It is not too sweet, but very chocolatey and dark. I make the ganache the day before then finish it off the next day.

PS...There is a picture in my pictures of the last wedding cake I did with this icing.

Whoa! I'm sold! Thank you for sharing, I'm trying that.
Zamode, I would think that Target would carry it if SuperTarget does since they have a dry food items section. Maybe they could special order it for you. And Peterlori1, thanks for the recipe! I definately will try that one! Looks too good to pass up!
Wow, that is a nice dark chocolate peterlori1, thanks for the tip!!
And thank you everyone else. I can't wait to try these all out.
You are all so welcome. I am glad to be able to contribute something for once. I just glean great stuff off everyone else here, and I appreciate all the great tips and ideas on the forums and in the galleries. Cake decorators are such sharing people!
They are and it's nice when your own friends don't get the constant cake talk or excitement over something like a cake tip!
No peterlori, they don't! You don't want to hear those four words from them, either.......like nails on chalkboard "it's just cake, right?" AUGH!
I've used a regular all butter chocolate buttercream recipe but use water, rather than milk, along with Hershey's Dark cocoa. The milk tends to lighten the color of the frosting but the water did not. I didn't notice any difference in taste because of the substitution. Besides the places that have been mentioned, I have found it at Lowe's Foods.
I'm going to look this week.....if I can't find it, I would like to know if anyone would pick some up for me and ship it out? Weird request, I know!
