Question Regarding Earlene's Cream Cheese Buttercream Icing

I am wanting to make this but I am not sure how much 7oz of Crisco is. I don't have a scale so I can't weigh it. Can someone please help me? I would guess just under 1 C but I don't want to mess up the recipe.

I just filled my measuring cup to 7oz, and then turned it to read the cup measurement. It falls almost exactly between 3/4 cup & 1 cup, however it is the slightest amount closer to 1 cup - a few drops probably. Did you check your measuring cup? Dumb question, but it never hurts to ask, I'd rather see your recipe right on! Good luck!

I use 7/8 cup. I make this recipe all the time and it works just fine.

Thanks for letting me know you make this with success. I am really looking forward to trying it.

I didn't use my measuring cup because of different items being heavier than other items. For example, not all items being equal 7oz of feathers would yeild and different amount than 7oz of rocks. I know that isn't food related, but that is where I was coming from.

I made Earlene's Cream Cheese Icing yesterday. I was very excited about the consistency when I made it yesterday. It seemed so creamy and almost satiny. It was sweeter than I had anticipated. I think next time I won't put as much Butavan in. Anyway, today when I iced my cake I could not get my cake smooth and it continously had cracks. I tried the hot icing spreader method and the Viva method. I have never had this happen before. My icing has never been perfect but much better than the results I had today. I normally use both Crisco and butter in my icing.

cupcake 55, do you have any problems getting your icing smooth?

I have not had any problems making the icing smooth. It doesn't matter whether it is Earlene's recipe or Wilton's, I get the same results. Also, I do not use butavan. I just use half cear vanilla and half clear butter flavoring. Is your icing too stiff when you put it on the cake? Did you let it set too long before smoothing? I can't think of any other reason for smoothing problems.
