What do you think or knw the difference is between the two?
I really like cake mix cakes. They are fluffy and yummy.
Scratch cakes are dense and the crumbs are tighter vs. loose like a cake from a mix.
I have made carrot cake from scratch and it is dense but oh so yummy and I don't like the cake mix carrot cake. I want the real thing.
I was thinking more along the lines of a yellow or chocolate scratch recipe.
Is is even worth it if the cake extender can make a good from scratch tasting cake. I used the cake extender with a vanilla cake mix and used the cake for strawberry shortcake. I just put stwberries and whip cream on top and it was yummy.

I just got the cake mix doctor book, and it's nice to have the convenience of the cake mix and the taste and texture of scratch together.
I always like from scratch, the quality is much better. Plus cake mixes have trans fats in them, and I don't like to serve that to people.
I do use the mixes for practice cakes though.
I love the texture of a cake mix, but unfortunately, with the kind of family and customers I have, they would flip if they found out I sold them a boxed mix!! So I make all my cakes that I sell from scratch.
My kids love the boxed mix though, so I make the yellow mix for them.
