i need a chocolate cake recipe from scratch that is SUPER SUPER MOIST, b/c after i change the sugar to splenda it's not going to be anymore.
My mom's only complaint about sugar-free cakes are that they are dry (store bought & 1 that i finally tried). I would love to surprise her with a moist one. This means more to me then if i get to decorate it.
please please help me, thanks
Splenda has recipes on their site, not sure how they are. The scratch ones I have had lately are dry but the Hershey's one is good. Supposedly you can use Splenda per cup as sugar, so you can try it maybe. Sorry, not much help.
i LOVE this cake recipe. i use it ALL the time and people rave about it. VERY moist. aside from this though, if you don't like this one, try looking for a Mayonaise Chocolate Cake. Sounds gross but actually quite yummy and it stays moist forever. HTH
Chocolate Cake
INGREDIENTS:
2 cups white sugar
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two nine inch round pans.
In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, oil and vanilla, mix for 2 minutes on medium speed of mixer. Stir in the boiling water last. Batter will be thin. Pour evenly into the prepared pans.
Bake 30 to 35 minutes in the preheated oven, until the cake tests done with a toothpick. Cool in the pans for 10 minutes, then remove to a wire rack to cool completely.
I LOVE the chocolate layer cake recipe from this site, check it out! It is sooo good, the only chocolate cake I will make now!
I love this one from baking 911.
