Hi I'm in the north east and last Sat I did an outside wedding. In 90 degree temp. i did my crumb coat, refrig, my cake over night with a thin layer of all shortenig butter flavored icing. i got up at 5,a.m to finish the decorating the cake, my kitchen was about 75, well to make along story short condensation formed on the three layers a well as a satellite cake, I was mopping them down with paper towel! to try to dry them ,I used a fan to try to dry them, Finally I made a very dry icing with the moisture on the cake I was able to smooth and dry the cake out, It was very pretty when it wAS FINISHED tHE BRIDE LOVED IT, THEY ATE IT ALL and it was a REALLY MOIST CAKE< live and learn next heat wave the cake goes into a cool room not the ICE BOX

I'm glad the wedding cake worked out for you !
It's been so humid here {Chicago area } that even with air cond. I've been putting cakes in the fridge. The fan works great.
