Ice Cream Cake Disaster

My friend wanted a chocolate ice cream groom's cake for her finace so I told her I would make one as her wedding gift (since they were moving from mid-US to Washington state and they already had enough to pack). I had never tried an ice cream cake before and I'm not sure I'll ever do it again.

We bought the ice cream on the way to the wedding. My husband spread the ice cream in my 12 x 18 pan while I set up the wedding cake (Lavendar & Roses in my pics). He put the ice cream in the freezer to set.

About 30 minutes before the wedding I thought the ice cream was chilled enough so I attempted to put the cake I had so neatly decorated on top. I had the cake on three strips of waxed paper so that I could put the cake on the ice cream and easily/gently pull them out. Low and behold, my three strip idea was the curse of it all! tapedshut.gif The cake literally split into three sections. I laughed so hard ~ as I do with all my bloopers. The people in the room thought I was crazy. They attempted to help me but it was no use although we did get the three sections on the cake.

As I tried repairing the cracks on the chocolate icing it just got worse. You know how much chocolate darkens as it crusts. I worked and worked and worked, ect......

I ended up getting a good look at my design and then started removing the whole design as well as all the icing that had darkened. This left me with a clean slate. Now, keep in mind that this cake is on ice cream. It was oozing icon_surprised.gif out of the pan quicker than I could clean it off. I was in my wedding attire and making a huge mess. I quickly reapplied my design ~ not too bad as I did it in about a minute. I cleaned up some more ooze. I had my darker chocolate ready to go so I quickly piped it around the sides using it to seal the ooze in. I put it in the freezer and by that time the whole wedding ceremony was over. I missed my friend's wedding! icon_cry.gif When it was time to cut the cake I snipped the greenery, put it around the cake to try to cover up the terrible mess and put it on the table ~ ooze and all. Turns out that the cake was delicious. It was a hit. I still have the pictures and the terribly funny memories & most importantly, I still have her as a friend. thumbs_up.gif

Great save!!! Your cake looks wonderful. Too bad that you missed the ceremony.

it looks good...to avid all that, u have to let the cake set in the pan for like 10 hours...30 minutes, NOT ENOUGH TIME AT ALLLL....i just set it up a few days before, put it in the freezer and then like a day before i take it out, decorate and back in the freezer...

By doing that would you serve the cake frozen or let it thaw a little before serving? In this case the bride didn't want the cake part to be frozen. Maybe that's impossible (at least without a mess icon_lol.gif ).
